I’ve been wanting to try the recipe for Jamie Eason’s Chocolate Protein Bars and I finally got the chance to do so today! I always find myself buying energy bars that are extremely high in fat and sugar so I wanted to try an alternative.
The recipe calls for:
1 cup Oat Flour
4 Egg Whites
2 scoops Vanilla Whey Protein Powder
1/3 cup Splenda, Truvia, or Ideal
1/2 tsp Baking Soda
1/4 tsp Salt
8oz Berry flavored Baby Food
3 tbsp Baking Cocoa
My tweaks: I only had Vanilla soy protein powder so I used that instead, I used 1/4 cup of Truvia instead of a 1/3, and for the Berry flavored Baby Food I used unsweetened apple sauce.
Preheat oven to 350 degrees.
In a large bowl, mix all the dry ingredients together ( oat flour, protein powder, baking soda, salt, baking cocoa). Then in a smaller bowl mix the liquids (egg whites, truvia, apple sauce, water).
Spray 8X8 dish with non-stick spray & add batter to the dish.
Bake for 20-30 minutes in oven.
Make sure to refrigerate if you’re saving these for later!
Of course like for all things I bake, I had to taste the batter and it tasted as sinful as cake. I was too excited to try the bars once they were done. The bars looked like chocolate cake but felt like a moist gooey brownie in my mouth! And wait until you see the nutrition facts (I still can’t believe this is healthy):
Fat: 1.4 g
Carbs: 12 g
Protein: 10 g
These just may be the solution to my constant chocolate cravings :).
