A long time back, I tried a chia seed pudding at The Plant Cafe and thought “wait a minute…this is super simple, I could make this at home!”
This quick and easy chia seed pudding is dairy-free, vegan, and delicious. It makes a great breakfast option or a healthy dessert!

Prep Time: 5 mins to prepare, 2 hours to chill
1 cup almond milk (sweetened or unsweetened)
1 cup coconut milk, unsweetened
1/2 cup chia seeds
1 tsp of raw honey
1/4 cup sliced almonds
1 handful of dried apricots, chopped
In a medium bowl or glass container, stir together almond milk, coconut milk and chia seeds. Cover with plastic wrap or lid and let it chill in the refrigerator for at least two hours. Before serving, stir pudding again. Scoop into individual bowls and top it with a little honey, almonds, and apricots. Feel free to substitute the toppings. I love fresh berries, and a little bit of brown sugar too!
