It’s saturday evening, I just ate dinner, and I’m craving dessert big time. I’m too lazy to leave my apartment so I resort to staring blankly at my refrigerator and pantry for a moment of inspiration….
I could pair my favorite lactose-free yogurt from Whole Foods and an apricot to create something delicious. I made a simple, healthy dessert by taking half an apricot, a large spoonful of yogurt, and some crushed nuts and honey to top it off. For the nuts, I used pistachios but I’m sure almonds or walnuts would taste great too!
I was more than satisfied. And proud of my resourcefulness.
