This past weekend, Nitzan and I headed down to San Diego to visit one of dear friends from high school, Nitya.
We packed our bags with some clean eats (think turkey sandwiches, veggies and fruits, almonds, and hard-boiled eggs) and headed down on our eight hour journey.
But by the end of the trip, I was so exhausted that I thought a cheat was much needed (Oops! :)).
The Fleming’s happy hour deal was bomb: 6 bucks for that big ol’ burger? Pair it with some cava and that’s pretty hard to beat.
Brunch next day at Cody’s was a little less naughty; I ordered the veggie hash with some wheat toast.
Unfortunately the weather gods weren’t on our side and it was rainy and cloudy throughout the weekend. The beach was still breath-taking per usual but it also gave off a calm, soothing feel that complemented the mood.
We had to change our original plans because of the rain, so our next best alternative was to go out for a sweet treat at Extraordinary Desserts.
Finally, to end this well-documented feast, we headed to Trader Joe’s to prep for a nice clean dinner. We ended up with an amazing meal of roasted eggplant stuffed with quinoa, spinach, ground turkey and topped with feta cheese. It was so delicious that I will have to make it again and share the recipe with you all!
